Goulart joined the Sonoma distillery in 2018 as an apprentice, following more than a decade in the wine industry that included earning degrees in enology and viticulture from California State University, Fresno, and stints with wineries in Australia and Portugal. In January 2021, she became head distiller, leading the site’s all-female team.
The craft distillery is noted for its emphasis on environmental stewardship; the owners, including proprietor and its original distiller Ashby Marshall, spent a decade working for environmental nonprofits before founding Spirit Works, an altruistic legacy Goulart intends to continue while implementing new projects. In addition to the distillery’s flagship whiskeys and gins, Goulart is developing Spirit Works’ first-ever amaro.
