Citrus is an important part of our Gin recipe. It was also the botanical that gave us the most trouble when we were in product development. In the early days we tried batch after batch using dried citrus all of which has some left over amount of pith leading to bitterness in the final product. Ashby then suggested that we use freshly zested Orange and Lemon as opposed to dry. It may require a bit more effort to accomplish but the results speak for themselves!
