Vodka Distillery

VODKA

 

Our vodka is made from organic, California-grown Hard Red Winter Wheat.

 

Originally created as the base of our gin, we decided to bottle this vodka after many requests during early distillery visits. This spirit is the perfect example of the importance of the grain to glass process. By starting with whole grain, we are able to preserve the distinct wheat characteristics throughout the distillation process.

 

This vodka displays sweet caramel and warm earthy notes – like the grain itself – and provides a round mouthfeel and extremely smooth finish.

 

We enjoy it simply on the rocks as a sipping vodka, to really savor the delicious wheat flavor, or add some spice with ginger beer and a squeeze of lime.

Gin Distillery

GIN

 

Our Gin starts with whole grains of organic California Red Winter wheat, which we mill, mash, ferment, and distill–entirely on site at the distillery.

 

This meticulous process maintains the distinct characteristics of the grain, creating our round and slightly sweet base spirit. It is classically distilled with juniper berries, to which we add both traditional old-world and fresh California botanicals. There are earthy notes from orris and angelica root, spicy notes of cardamom and coriander, bright citrus notes from hand-zested orange and lemon, as well as floral hibiscus. This harmonious balance creates a gin that is best described as traditionally dry, yet freshly unique.

 

We recommend savoring this spirit simply in a dry martini with a touch of vermouth or mixed into your favorite gin cocktail.

Barrel Gin Cocktail

BARREL GIN

 

For our Barrel Gin, we begin with Spirit Works Gin which has been distilled from organic California Red Winter Wheat.

 

After resting for several months in new American White Oak barrels, the result is a smooth, toasty aged spirit with a round, slightly sweet mouth-feel and subtle spice. The time in the barrel has contributed all of the beautiful qualities you might expect to find in a barrel aged product, from the beautiful amber color to the rich notes of vanilla and butterscotch. These wonderful barrel-aged qualities complement the mix of old-world and fresh California botanicals in our gin. We recommend sipping this barrel aged gin neat or trying it in one of our preferred Barrel Gin cocktails!

 

Sloe Gin Cocktails

SLOE GIN

 

Traditional sloe gin is a berry-infused liqueur made by steeping sloe berries—a tiny relative of the plum—in gin and adding just a touch of sweetness.

 

In the UK, foraging the wild berries, steeping them in gin, and making the liqueur has been part of rural family tradition for centuries. Our Sloe Gin recipe has been handed down through the Marshall family for generations: we start with our signature gin, which we macerate with sloe berries until the delicious fruit flavor and color have fully released in the gin. This vibrantly-hued liqueur features both bright berry and citrus notes, combining ripe sweetness with fresh acidity.

 

Traditionally, sloe gin is served after a meal by itself as a digestif, but its unique color and flavor also combine wonderfully with a wide variety of spirits. It is delicious when mixed with everything from whiskey to agave spirits, but is also wonderful with sparkling wine and makes an incredible Sloe Gin Fizz.

BARREL RESERVE SLOE GIN

 

Spirit Works Distillery Barrel Reserve Sloe Gin is the first, and only, of its kind. We had never heard of a barrel-aged Sloe Gin before, and the temptation was too much. We begin with Spirit Works Sloe Gin and, much like with our Barrel Gin, let it rest in a full-size new, charred, American White Oak barrel for several months.

 

Time in the barrel rounds the tart characteristics of the sloes and the result is a rich and full-bodied liqueur with a velvety mouth-feel. Boasting with notes of clove, cardamom, and orange peel, this truly one of a kind product is the perfect sip at the end of any meal.

Straight Wheat Whiskey

 WHEAT WHISKEY

 

Our Straight Wheat Whiskey is made from 100% organic, Red Winter Wheat grown in California’s Sacramento Valley. We are proud to mill, mash, ferment, and distill all of our spirits entirely on site at our distillery in Sonoma County.

Each batch is aged for a minimum of two years in 53-gallon, charred, brand new American White Oak barrels; it is non-chill filtered in order to preserve the full aromatic complexity of this uniquely American spirit. Deliberate cuts during distillation ensure that this whiskey emerges from its time in barrel as a finely layered and truly distinguished spirit.

Nose: Tobacco and butterscotch mingle with a trace of subtle minerality.

Palate: A long, smooth sip begins with caramelized sugar, filling out with delicate notes of sweet tea, toasted walnut, and juicy stone fruit.

Finish: A campfire memory of graham crackers, subtle smoke, and bittersweet cocoa nib finishes with a hint of creamy vanilla.

Straight Rye Whiskey

RYE WHISKEY

 

Our Straight Rye Whiskey is a true small-batch, high-rye whiskey. Rugged and robust, our rye rewards the discerning drinker who, like us, is thrilled at the resurgence of this heritage spirit. We’re proud to mill, mash, ferment, and distill all of our spirits entirely on site at our distillery in Sonoma County.

Each batch is aged for a minimum of two years in 53-gallon, charred, brand new American White Oak barrels; it is non-chill filtered in order to preserve the full aromatic complexity of this remarkable American whiskey. Deliberate cuts during distillation ensure that this whiskey emerges from its time in barrel as a finely layered and truly distinguished spirit.

Nose: Bright, tart green apple giving way to autumnal notes of baked apple and coffee, followed by a woodsy aroma of cedar and leather.

Palate: Peppery hints of clove and nutmeg enliven an alluring blend of caramel, vanilla, and toasted coconut.

Finish: Sweet golden honeycomb rolls down to a smooth finish of warm spice.
